Seasoning
Method:
- Freeze seasoned steaks flat as possible, uncovered on a baking sheet for at least 1 hour before cooking.
- Sear in very hot skillet with 1/8" deep oil for 90 seconds each side.
- Transfer to wire rack over rimmed baking sheet & cook in centre of oven set at 135C until steaks reach internal temperature of 60C (medium rare).
- Let steaks sit for 10 mins.
- Serve on warm plates.
55C = rare
60C = medium rare
68C = medium
74C = well done
