1 clove garlic, cut in half
8 anchovy fillets, cut up (OR 2 tsp anchovy paste)
⅓ cup olive or vegetable oil
3 Tbsp lemon juice
1 tsp worcestershire sauce
¼ tsp salt
¼ tsp ground mustard (dry)
freshly ground pepper
1 large romaine bunch, torn into pieces
1 cup garlic-flavoured croutons
⅓ cup grated Parmesan cheese
Method:
- Rub large wooden salad bowl with cut garlic clove. Garlic pieces can remain, if desired.
- Mix anchovies, oil, lemon juice, worcestershire sauce, salt, mustard & pepper in salad bowl.
- Add romaine, toss until coated. Sprinkle with crouton & cheese; toss.
- Cut 4 slices of day-old bread into ½" cubes & toss with 25ml olive oil & 1 Tbsp crushed garlic clove.
- Spread out on a baking sheet in a single layer & bake in 180°C oven for 15-20 mins, stirring occasionally, until browned & crisp. Remove & leave to cool.
