2 lb lemons
1 qt grain alcohol, e.g. vodka
2½ cups sugar
6 cups purified water
Method:
- Zest the lemon & add to vodka & store in tightly sealed bottle in a cool, dark dry place for 3-5 days. Shake bottle at least twice a day. Zest will turn white when flavouring is done. Strain.
- Place water in saucepan over low heat & dissolve sugar. Cool to room temperature.
- Mix syrup with lemon vodka & strain through several changes of coffee filters.
- Store in tightly sealed bottle in refrigerator.
