1 head Broccoli, cut into small florets
1 head Cauliflower, cut into small florets
1 egg, lightly beaten
1 small Onion, diced
1/2 cup Self-rising flour
1/2 teaspoon Cumin
1/2 teaspoon Turmeric
1/2 teaspoon Paprika
1 teaspoon Cayenne Pepper
Salt and pepper to taste
1/3 cup mixed cheese (Mozarella and Parmesan)
1/4 cup of milk Vegetable oil
Method
- Cook the broccoli and cauliflower in a lightly salted boiling water until tender (about 7-8 minutes).
- Drain and mash (with fork or a potato masher).
- Stir in the rest of the ingredients and mix well.
- Heat oil in a small skillet/pan, and spoon 1/4 cup of mixture into the pan, flatten with a spatula. Fry until both sides are golden brown.
- Remove from pan and repeat the process.
- Serve the fritter with a dollop of Greek Yoghurt, sprinkling of Spring Onions and more Cayenne Pepper if you like it hot.
