1 cup ketchup
1 -2 tablespoon horseradish (to your taste)

1/2 teaspoon Worcestershire sauce
1/4 teaspoon salt
1 dash pepper

  1. Mix all ingredients and chill.

Thai Green Curry Chicken

Ingredients:
Green curry paste:
4 small green Thai chilies (cili padi)
1/4 cup shallot OR purple onion, diced
4 cloves garlic, minced
1 thumb-size piece galangal OR ginger, grated
1 stalk fresh minced lemongrass
1/2 tsp. ground coriander
1/2 tsp. ground cumin
3/4 to 1 tsp. shrimp paste
1 (loose) cup fresh coriander/cilantro leaves and stems, chopped
1/2 tsp. ground white pepper
3 Tbsp. fish sauce
1 tsp. brown sugar
2 Tbsp. lime juice

Curry Ingredients:
1 to 1.5 lbs. (about 0.7 kg) boneless chicken thigh or breast, cut into chunks
1 can coconut milk
4 kaffir lime leaves (daun limau perut)
1 red bell pepper, seeded and cut into chunks
1 zucchini, sliced lengthwise several times, then cut into chunks
Generous handful fresh basil
2 Tbsp. coconut oil or other vegetable oil

Preparation:
  1. Place all the "green curry paste" ingredients together in a food processor, and process to a paste. If necessary, add a few Tbsp. of the coconut milk to help blend ingredients. Set aside.
  2. Prepare the lime leaves by tearing the leaf away from either side of the stem. Discard the central stem. Then, using scissors, cut leaves into thin strips. Set aside.
  3. Warm a wok or large frying pan over medium-high heat. Add the oil and swirl around, then add the green curry paste.
  4. Stir-fry briefly to release the fragrance (30 seconds to 1 minute), then add 3/4 of the coconut milk, reserving 2-3 Tbsp. per serving portion for later.
  5. Add the chicken, stirring to incorporate. When the curry sauce comes to a boil, reduce heat to medium or medium-low, until you get a nice simmer.
  6. Cover and allow to simmer 3-5 more minutes, or until chicken is cooked through. Stir occasionally.
  7. Add the red bell pepper and zucchini, plus the strips of lime leaf (or lime zest), stirring well to incorporate. Simmer another 2-3 minutes, or until vegetables are softened but still firm and colorful.
  8. Do a taste-test for salt, adding 1-2 Tbsp. fish sauce if not salty enough. If you'd prefer a sweeter curry, add a little more sugar. If too salty, add a squeeze of lime or lemon juice. If too spicy, add more coconut milk. Note that this curry should be a balance of salty, spicy, sweet and sour, plus bitter (the bitter is found in the fresh basil garnish).
  9. Top with fresh basil, then drizzle over 2-3 Tbsp. coconut milk, and ENJOY!

Carrot cake

Ingredients:
4 eggs
1 1/4 cups vegetable oil
2 cups white sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
3 cups grated carrots
1 cup chopped pecans
1/2 cup butter, softened
8 ounces cream cheese, softened
4 cups confectioners' sugar
1 teaspoon vanilla extract
1 cup chopped pecans

Method:
  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
  2. In a large bowl, beat together eggs, oil, white sugar and 2 teaspoons vanilla. Mix in flour, baking soda, baking powder, salt and cinnamon. Stir in carrots. Fold in pecans. Pour into prepared pan.
  3. Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
  4. To Make Frosting: In a medium bowl, combine butter, cream cheese, confectioners' sugar and 1 teaspoon vanilla. Beat until the mixture is smooth and creamy. Stir in chopped pecans. Frost the cooled cake.
After reading through 4-5 pages of the reviews, I consolidated the most referred alterations to this recipe to: 1) using 1 cup brown sugar and 1 cup white sugar 2) adding an extra teaspoon of vanilla extract 3) adding 1 8oz. can of crushed pineapple (I squeezed out most of the juice before adding it, I didn't want any extra fluids in the cake) 4) Added 1/4 teaspoon of nutmeg 5) added 1 extra teaspoon of cinnamon 6) used 3/4 cup canola oil and 1/2 cup applesauce. The result came out incredibly delicious - the cake was very flavorful and moist. For the frosting, I only used 3.5 cups of powdered sugar, and it was more than sweet enough, with a nicely balanced cream cheese vs. sweet flavor. If I would change anything again, I would use less pecans - it's a bit too nutty for my personal tastes. Also, I followed another reviewer's suggestion of grating the carrots with the large grater side (the one you use for cheese) so that you don't end up with a bunch of carrot mush and juice that can't be used. Will definitely make again! This is probably the best carrot cake I've ever had.

Pancakes

Ingredients:
1/3 cup whole wheat flour
1/2 scoop vanilla protein powder
1/4 tsp baking powder
2 tsp brown sugar
1/4 tsp cinnamon
1/8 tsp each: ground cloves, ginger, nutmeg
1/4 cup finely chopped apple
1/3 cup almond milk
1 whole egg
1/4 cup egg whites
1 TB plain nonfat Greek yogurt
1 TB water
1/2 tsp lemon juice
1 tsp vanilla extract
Method
  1. Put all (yes, all) ingredients in a bowl and mix together until a smooth batter is formed. (Depending upon protein powder used, batter might be thick; if so, add additional water 1 TB at a time until batter is pourable). Set aside.
  2. Coat skillet lightly with non-stick cooking spray and place on medium-high heat. Allow to heat up for approximately 30 seconds. (Depending how big your skillet is, you might need to repeat this process to cook all pancakes).
  3. Pour batter slowly onto heated skillet to form approximate 3” round pancakes. Fit as many as you can at one time so you can eat sooner ☺
  4. Let cook for approximately 2 minutes or until bubbles form on top of pancake and underside is nice and brown. Once this occurs, flip pancakes over and cook for an additional 1-2 minutes or until pancakes are firm and underside is also browned. Stack on a plate. (Repeat this process until all batter is used).

Yasmin's Lobster Yee Mein (Lobster Noodles with Ginger and Scallions)

Ingredients:
1 lobster (about 2.5 – 3 lbs)
4 oz. Yee Mein or E-Fu Noodles
1 1/2 cup water + 1 tablespoon corn starch (use more corn starch if you like thicker sauce)
2 stalks scallions (cut into 2-inch length)
10-12 slices peeled ginger
3 tablespoons cooking oil
Extra cooking oil for frying

Sauce:
2 tablespoons oyster sauce
1 tablespoon soy sauce
1/8 teaspoon white pepper powder
1 1/2 teaspoons sugar
1/2 teaspoon sesame oil
1 tablespoon Shaoxing wine
Salt to taste

Method:
  1. Clean the lobster and chop into pieces. Lightly crack the lobster claws in advance. Blot the lobster dry with paper towels.
  2. Heat up a pot of boiling water and boil the Yee Mein according to the packing instructions. Make sure not to over boil the Yee Mein. Drain and set aside on a big plate/bowl.
  3. In a big wok or deep skillet, heat up 3 tablespoons of cooking oil. Stir-fry the ginger until aromatic and drop in the lobster. Stir continuously until they start turning red, then add in the sauce, follow by the water.
  4. Continue to stir and coat the sauce nicely, then cover the wok/skillet with its lid and wait for a couple minutes or until the lobster pieces are cooked through. (Do not over cook the lobter as it will turn rubbery in texture!)
  5. Remove the lid and add the chopped scallions into the lobster. Add salt to taste if needed.
  6. Transfer the lobster out and pour onto the bed of yee mein. Serve immediately.

Strawberry cream pavlova

Ingredients:
2 egg whites
100g (1/2 cup) caster sugar
200g strawberries, hulled, sliced
2 tbs strawberry liqueur
1 tbs icing sugar mixture
125ml (1/2 cup) thickened cream
1/2 tsp vanilla bean paste
Icing sugar, to dust

Method:
  1. Preheat oven to 130°C. Draw six 10cm-long, 9cm-wide heart shapes on a sheet of baking paper. Turn over and place on a large baking tray.
  2. Use an electric beater to beat egg whites in a clean, dry bowl until soft peaks form. Gradually add the caster sugar, 1 tbs at a time, beating well after each addition until the sugar dissolves and the mixture is thick and glossy.
  3. Transfer the meringue mixture to a piping bag fitted with a 1cm plain nozzle. Pipe an outline around inside of heart shapes, then pipe a little into centre of each heart and use a palette knife to spread to the edges. Bake for 40 minutes or until crisp and dry. Set aside to cool completely.
  4. Meanwhile, combine the strawberries, strawberry liqueur and icing sugar in a bowl. Set aside for 30 minutes to macerate.
  5. Use an electric beater to beat the cream and vanilla in a bowl until firm peaks form. Place 1 meringue heart on each plate. Top with the cream and strawberry mixture. Top each with another meringue heart. Dust with icing sugar.
TIP: Make the meringue hearts up to 3 days ahead. Store in an airtight container.

Bread & Butter Pudding

Ingredients:
50g currants, raisins or sultanas, or a mixture, optional
3 tbsp brandy, optional
200ml whole milk
Vanilla pod, halved
Zest of ½ lemon
75g slightly salted butter
8 slices of slightly stale white sourdough, fruit bread or panettone, cut into triangles
3 eggs
2 tbsp caster sugar
100ml double cream
1 tbsp demerara sugar
Nutmeg, to grate

Method:
  1. If you're using panettone or fruit bread, you can skip this step if you like. Put the dried fruit into a small cup and pour over the brandy to cover. Cover tightly and leave to soak overnight.
  2. When you're ready to make the pudding, put the milk into a small pan with the vanilla pod. Bring to a simmer, then turn off the heat, add the lemon zest and allow to cool.
  3. Meanwhile, butter the bread and your baking dish and arrange half the slices in overlapping rows inside. Beat the eggs together with the sugar until well mixed, and then remove the vanilla pod from the milk and discard before beating the milk and the cream into the egg mixture. Pour a little more than half over the bread, add the soaked fruit if using, and leave for 20 minutes.
  4. Pre-heat the oven to 180C. Arrange the rest of the bread in a second layer in the baking dish and drizzle over the rest of the custard. Dot with the rest of the butter, scatter with demerara sugar and grate some nutmeg over the top.
  5. Place in a roasting tin and and fill halfway with water to make a bain marie. Cook for 35 – 45 minutes until golden brown. Allow to stand for 10 minutes before serving.

Balsamic and Mustard Dressing

Ingredients
1/4 cup balsamic vinegar
1/2 cup olive oil
1 tsp Dijon mustard (I prefer grainy, but smooth is fine)
1 tsp honey (agave will also work)
1 tsp dried herbs eg. oregano, thyme (Leave these out if there are flavors in the salad or dish you may not want them to compete with)
salt & pepper

Method
  1. You can either mix it with a fork, a whisk or shake it up a jar (any shape will do!). But for optimal flavor, really mix it. Use a jar if you’re going to be making extra and storing it, since it will store in the fridge for anywhere from months to forever.

French Macarons

Ingredients
  • For The Macarons

    • 1 cup confectioners' sugar
    • 3/4 cup almond flour
    • 2 large egg whites, room temperature
    • Pinch of cream of tartar
    • 1/4 cup superfine sugar
  • Suggested Fillings For Macarons

    • Chocolate: Chocolate Ganache
    • Coconut: 1 cup Swiss Meringue Buttercream, mixed with 1/3 cup angel-flake coconut.
    • Peanut: Chocolate Ganache, or store-bought dulce de leche, jam, or peanut butter.
    • Pistachio: 1 cup Swiss Meringue Buttercream, mixed with 1/3 cup finely chopped pistachios.
    • Raspberry: 3/4 cup seedless raspberry jam
    • Method

      1. Pulse confectioners' sugar and almond flour in a food processor until combined. Sift mixture 2 times.
      2. Preheat oven to 375 degrees. Whisk whites with a mixer on medium speed until foamy. Add cream of tartar, and whisk until soft peaks form. Reduce speed to low, then add superfine sugar. Increase speed to high, and whisk until stiff peaks form, about 8 minutes. Sift flour mixture over whites, and fold until mixture is smooth and shiny.
      3. Transfer batter to a pastry bag fitted with a 1/2-inch plain round tip, and pipe 3/4-inch rounds 1 inch apart on parchment-lined baking sheets, dragging pastry tip to the side of rounds rather than forming peaks. Tap bottom of each sheet on work surface to release trapped air. Let stand at room temperature for 15 minutes. Reduce oven temperature to 325 degrees. Bake 1 sheet at a time, rotating halfway through, until macarons are crisp and firm, about 10 minutes. After each batch, increase oven temperature to 375 degrees, heat for 5 minutes, then reduce to 325 degrees.
      4. Let macarons cool on sheets for 2 to 3 minutes, then transfer to a wire rack. (If macarons stick, spray water underneath parchment on hot sheet. The steam will help release macarons.)
      5. Sandwich 2 same-size macarons with 1 teaspoon filling. Serve immediately, or stack between layers of parchment, wrap in plastic, and freeze for up to 3 months.

      Cook's Note

Piping the perfect macaroon takes a little practice. Treat it as you would a rosette, bringing the pastry tip to the side of the circle, rather than forming a peak, to finish.

      Variations

Chocolate: Substitute 3 tablespoons unsweetened Dutch-process cocoa powder for 1/4 cup of the almond flour.

Quick Brazilian Cheese Rolls (Pao de Queijo) – Gluten Free!

Ingredients:
1 large egg
1/2 cup milk
1/4 cup canola oil
1 cup tapioca flour (sometimes labeled tapioca starch) no substitutions
1/2 tsp kosher salt
1/4 C grated cheddar cheese* (preferably medium or sharp)
1/4 C grated Parmesan cheese *you can play around with the cheese. I’ve used Monterey Jack, low-moisture mozarella, swiss, and even gruyere in place of the cheddar. All great!

Optional:
extra cheese to sprinkle on top and any herbs/flavorings you’d like to add. Try rosemary and or garlic powder, my favorites!

Method:
  1. Preheat oven to 400 degrees.
  2. Place egg, milk, oil, tapioca flour, and salt in blender and blend until smooth.
  3. Add cheeses and pulse 2 times.
  4. Immediately pour batter into a mini muffin tin (if your muffin tin isn’t non-stick, spray lightly with non-stick spray first), filling each well about 3/4 full, or just slightly less.
  5. If desired (and I recommend), sprinkle a bit of parmesan cheese on top and/or a tiny sprinkle of kosher salt.
  6. Bake for 15-20 minutes until puffed and golden.
  7. Remove from oven and cool for a few minutes before removing rolls from pan. Serve warm.
These actually don’t re-heat well so I recommend making and eating fresh.
Yield: anywhere from 16-24 rolls, depending on how full you fill your muffin pan. I fill mine pretty full (a good 3/4 full) and I generally get about 16-18.

Slow Provençal Lamb

Ingredients:
1 lamb shoulder, about 4-1/2 pounds/2 kg, cut into large chunks
Salt and pepper
3 tablespoons olive oil
3 onions, peeled and sliced
6 plum tomatoes
About 1-1/2 cups/375 ml red or white wine
1 cup/250 ml veal stock
1 head garlic, broken into peeled cloves
3 bay leaves
2 rosemary branches
1 bouquet fresh thyme
1 pound/450 g red peppers, seeded and cut into strips
1 pound/450 g eggplant, cut into chunks
1 pound/450 zucchini, cut into chunks

Method:
  1. Heat the oven to 300°F or 150°C.
  2. Season the lamb generously with salt and pepper. Heat a spoonful or two of the oil in a cocotte and brown the meat well on both sides, about 15 minutes per side. Remove the meat.
  3. Add another spoonful of oil and cook the onions until soft, 5 to 7 minutes.
  4. While the onions are browning, peel, quarter, and seed the tomatoes over a sieve set over a bowl to catch the juices. Reserve the tomatoes for later.
  5. Pour the juice into a 2 cup/500 ml measuring cup and add enough wine to fill. Deglaze the onions with the veal stock, stirring up the good bits from the bottom.
  6. Add the wine and tomato juice mixture. Add the garlic, bay leaves, rosemary, and thyme. Wet a piece of parchment paper and lay it over the meat, set on a lid, and bake 1-/2 hours.
  7. While the lamb cooks, salt the eggplant and set in a colander to drain, about 30 minutes. Rinse and pat dry.
  8. Roast the red peppers.
  9. Once the lamb has cooked 1-1/2 hours, add the eggplant, tomatoes and peppers, cover and cook for another hour.
  10. Increase the heat to 400°F/200°C.
  11. Remove the lid and the parchment, add the zucchini, and cook a further 45 minutes uncovered.
  12. Serve straight from the pot.
  13. Remove from the oven. Remove the herbs.
  14. Spoon the lamb onto plates, with the sauce spooned over.

Spaghetti Aglio Olio

Ingredients:
13 oz of dried spaghetti
1/2 cup of olive oil
4 garlic cloves, finely chopped
1-2 large red chillies, seeded and finely chopped
2 tablespoons of fresh parsley, finely chopped
salt and freshly ground black pepper to taste

Method:
  1. Bring a large saucepan of salted water to a boil and add the spaghetti. Stir well and boil rapidly for 8 minutes, or until the pasta is al dente.
  2. Meanwhile, combine the oil, garlic, and chilli in a small saucepan. Cook over a low heat for 7-8 minutes to allow the oil to absorb all the flavors. The garlic should become golden brown but don’t allow it to burn.
  3. Drain the cooked pasta and return it to the large saucepan over a very low heat. Make sure it’s not a high heat because you don’t want to dry out the pasta. Pour the oil mixture over the pasta and add the parsley. Mix thoroughly so all the pasta is well coated with the oil. Season with salt and pepper to taste and serve immediately.

100g./4oz. freshly grated parmesan.
Salt & freshly ground black pepper to taste.

  2. Add the Chilli and stir.
  3. Now add the herbs - stir and remove from the heat.
  4. Meanwhile cook the spaghetti.
  5. Reheat the sauce - add the drained spaghetti - toss and serve in a warmed earthenware cazuela, with a sprinkle of salt, a good grinding of black pepper and generous amounts of the grated Parmesan.

Portuguese Egg Tart (Poh Taht, Pateis de Belem, pastel de nata)

Ingredients:
1 Tbsp cornstarch
1 cup half and half (½ cup cream combined with ½ cup whole milk)
3 Tbsp sugar
a pinch of salt
3 large egg yolks
1½ inches cassia or cinnamon stick
2 strips lemon peel, each 2-3" long and ½" thick (use a vegetable peeler to remove)
¼ teaspoon vanilla extract
10 oz frozen puff pastry, thawed according to package directions

Direction:
  1. Put the cornstarch into a small, heavy bottomed saucepan. Whisk in a few Tbsps of the half-and-half to dissolve the cornstarch. Then add the sugar, salt, and egg yolks. Whisk to combine. Add the remaining half and half, then whisk to blend. Drop in the cinnamon stick and lemon peel.
  2. Cook the custard over medium heat, stirring frequently with the whisk or a spoon, for about 8 mins, until very thick. When the custard gets hot and steam wafts from the pot, stir constantly to ensure even cooking. When done, it should jiggle a bit when you shake the pan. Remove from the heat, stir in the vanilla extract.
  3. Transfer to a bowl, loosely cover with a piece of parchment or wax paper, making sure the surface touches that of the custard; this prevents a skin from forming. Set aside to cool. (The custard can be prepared up to 3 days in advance and refrigerated. Return to room temperature before using.) Makes 1 1/4 cups.
  4. Work with the puff pastry when it is cold as it is much easier to manipulate. Take it straight from the refrigerator and put it on an unfloured cutting board. If necessary, roll it out into a rectangle that is a generous 1/8 inch thick. Pick up one of the longer edges and roll the pastry up into a log that is about 1 inch thick. Roll the log gently to seal well. Tap the ends in to flatten them. Put the log on a parchment paper lined baking sheet, loosely cover with plastic wrap, and refrigerate for 15 minutes.
  5. Meanwhile, position the oven rack about 4 inches away from your broiler. Preheat the oven to 205C. Have ready a nonstick mini-muffin pan; each of the 12 wells in such a pan is about 2" wide and 5/8" deep. Nearby have a small bowl of water and the custard.
  6. Remove the pastry log from the refrigerator and cut it in half. Work with one half at a time, keep the other one covered and refrigerated.  Cut the log into 10 even pieces. Put one, with one of the cut sides facing up, in each of the muffin pan wells. If the pastry is hard, let it soften for a couple minutes. Wet one of your thumbs with water, then push it straight down in the center of the dough spiral as if you’re making a thumbprint cookie.
  7. Then use the thumb to flatten the pastry against the bottom of the well and then up its sides. Aim for an overall thickness of about 1/8". Work the corner of the well with your index finger as it’s an area where the dough tends to be gather. Then gently push the dough above the rim about 1/8" to form a lip. The dough will sink back down as it sits but try your best. If the dough seems too elastic and resists your will, refrigerate the muffin pan for 15 mins to relax the pastry before giving it another try.
  8. Fill each well about ¾ full. A scant 1 Tbsp is what I typically use. Too little custard and the baked tarts show too much of their tanned shoulders of pastry. Too much custard and the custard will spill out and form a funny looking lava-like flow. Regardless, your tarts will taste great.
  9. Slide the muffin pan into the oven and bake for 12 to 13 mins, until the custard has puffed up into a mushroomlike dome and small cracks form. Then switch on the broiler and broil the tarts for about 3 mins, monitoring them carefully, until the tops have acquired little caramelized burnt spots. Remove from the oven, let cool for 5 mins, then unmold by slipping a dinner knife between the pastry and the muffin well.  Serve warm.
Baking at a moderately high heat and then switching to broil results in the crème brulee like top. The puff pastry (I used all-butter Dufour brand sold at many high-end grocery stores) makes for a super light shell. You can use your favorite brand or ask a nearby bakery to supply you. Or instead of puff pastry, try a short pastry crust for a tender, rich crust. I used the one that I developed for Singaporean spiced pineapple filled pastries (kuih tart, page 195 in Asian Dumplings). Omit the annatto as that causes the dough to overbrown. If you use this short pastry dough, bake the tarts at 375F for 10 to 12 minutes and then broil them for 3 to 5 minutes. The custard will not puff up like with the puff pastry but the flavor will be just as lovely.

  4. Place the onions, carrots, and fennel in a roasting pan. Toss with salt, pepper, 20 sprigs of thyme, and olive oil. Spread around the bottom of the roasting pan and place the chicken on top.
  5. Roast the chicken for  ½ hours, or until the juices run clear when you cut between a leg and thigh. Remove the chicken and vegetables to a platter and cover with aluminum foil for about 20 mins. Slice the chicken onto a platter and serve it with the vegetables.

Southern Red Velvet Cake

Ingredients:
Vegetable oil for the pans
2½ cups all-purpose flour
1½ cups sugar
1½ tsp baking soda
1 tsp fine salt
2 tsp cocoa powder
1½ cups vegetable oil
1 cup buttermilk, at room temperature
2 large eggs, at room temperature
2 Tbsp red food coloring (1 ounce)
1 tsp white distilled vinegar
1 tsp vanilla extract
Cream Cheese Frosting, recipe follows
Crushed pecans, for garnish

Method:
  1. Preheat the oven to 175°C. Lightly oil and flour 3 (9 by 1½-inch round) cake pans.
  2. In a large bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder.
  3. In another large bowl, whisk together the oil, buttermilk, eggs, food coloring, vinegar, and vanilla.
  4. Using a standing mixer, mix the dry ingredients into the wet ingredients until just combined and a smooth batter is formed.
  5. Divide the cake batter evenly among the prepared cake pans. Place the pans in the oven evenly spaced apart. Bake, rotating the pans halfway through the cooking, until the cake pulls away from the side of the pans, and a toothpick inserted in the center of the cakes comes out clean, about 30 minutes.  DO NOT PROLONG BAKING, as cake will start browning & lose its red colour.
  6. Remove the cakes from the oven and run a knife around the edges to loosen them from the sides of the pans. One at a time, invert the cakes onto a plate and then re-invert them onto a cooling rack, rounded-sides up. Let cool completely.
  7. Frost the cake. Place 1 layer, rounded-side down, in the middle of a rotating cake stand. Using a palette knife or offset spatula spread some of the cream cheese frosting over the top of the cake. (Spread enough frosting to make a 1/4 to ½-inch layer.) Carefully set another layer on top, rounded-side down, and repeat. Top with the remaining layer and cover the entire cake with the remaining frosting. Sprinkle the top with the pecans.
Cream Cheese Frosting:
1 pound cream cheese, softened
1 cup sifted confectioners' sugar
2 sticks unsalted butter (1 cup), softened
1 tsp vanilla extract
  1. In a standing mixer fitted with the paddle attachment, or with a hand-held electric mixer in a large bowl, mix the cream cheese, sugar, and butter on low speed until incorporated. Increase the speed to high, and mix until light and fluffy, about 5 minutes. (Occasionally turn the mixer off, and scrape the down the sides of the bowl with a rubber spatula.)
  2. Reduce the speed of the mixer to low. Add the vanilla, raise the speed to high and mix briefly until fluffy (scrape down the bowl occasionally). Store in the refrigerator until somewhat stiff, before using. May be stored in the refrigerator for 3 days.
Yield: enough to frost a 3 layer (9-inch) cake

Crispy Aromatic Duck

Ingredients:
1x2.75kg duck, fresh or frozen
6 slices of fresh root ginger
6 spring onions, cut into 7.5cm in lengths
cornflour, plain flour or potato flour for dusting
Groundnut oil

For the Spice Rub:
2 tbsp five-spice powder
65g sichuan peppercorns
25g whole black peppercorns
3 tbsp cumin seeds
200g rock salt

To Serve: chinese pancakes 6 spring onions, finely shredded hoisin sauce.

Method:
  1. If the duck is frozen, thaw it thoroughly. Rinse well and blot it completely dry with kitchen paper.
  2. Mix all the ingredients for the spice rub together in a small bowl, then rub the duck inside and out with this mixture, applying it evenly. Wrap well in clingfilm and place in the refrigerator for 24 hours.
  3. After this time, brush any excess spices from the duck. Stuff the ginger and spring onions into the cavity and put the duck on a heatproof plate.
  4. Set up a steamer or put a rack into a wok. Fill it with 5cm/2in of water and bring to the boil. Lower the duck and place into the steamer and cover tightly.
  5. Steam gently for 2 hours, pouring off excess fat from time to time. Add more water as necessary. Remove the duck from the steamer and pour off all the liquid. Discard the ginger and spring onions.
  6. Leave the duck in a cool place for 2 hours or until it has dried and cooled. At this point the duck can be refrigerated/frozen.
  7. Just before you are ready to serve it, cut the duck into quarters and dust with cornflour, plain flour or potato flour, shaking off the excess.
  8. Heat the oil in a wok or deep fat fryer. When it is almost smoking, deep-fry the duck quarters in 2 batches. Fry the breasts for about 8-10 minutes and the thighs and legs for about 12-15 minutes, until each quarter is crisp and heated right through.
  9. Drain the duck on kitchen paper and leave until cool enough to handle.
  10. Then remove the meat from the bones and shread it. You can do this easily with a fork. The chinese eat it with bones and all.
  11. Serve with the chinese pancakes, spring onions and hoisin sauce.
