10 whole chicken wings
2 Tbsp light soya sauce
1 tsp sesame oil
4 Tbsp shaoxing wine
1 Tbsp white pepper
1 ¼ Tbsp turmeric powder
3 Tbsp potato starch
2 Tbsp cornstarch
1 Tbsp water optional
Cooking Oil for deep frying
Method:
- Mix all ingredients (except oil) & marinate in fridge for about 2 hours.
- Heat oil & test with a little batter. If the batter floats, the oil is hot enough.
- Deep fry the wings whilst turning over to ensure even cooking.
- Fry any remaining batter as crunchy bits.
- Before serving, do a quick refry to ensure it's crispy.
