200 g Almonds
125 g sugar
125 g honey
1 egg white
Instructions
- Boil almonds for 3 mins. Drain & remove the skins.
- Roast the almonds for 10-15 mins at 170°C.
- Whisk the egg white until thick consistency.
- Add the sugar & honey to a pan over low heat, whilst mixing constantly until sugar is dissolved.
- Remove the sugar mix from heat & add the egg white into the pan slowly.
- Whisk the mixture over low heat until well incorporated.
- Remove from heat & add warm almonds to the mixture & mix well.
- Pour in moulds & allow to cool, then refrigerate for 12 hours.
- Cut into squares & store in air tight container.
